Cake Poulet et Lait de Coco « à la Thaï », « A la Thaï » Chicken and coconut milk loaf
Some roast chicken leftovers? No inspiration?
Super Froggy comes to your rescue! I can bring you to the Mediteranean shores
with this cozy risotto or, if you feel in an adventurous mood, to the Far East
with a Chicken and Coconut milk Loaf. A total improvisation for me: I have just
added the ingredients, which, for me, symbolize Thaï food at its best: coconut
milk, lime, lemongrass, ginger and cilantro (I hesitated a long time between
that and fresh mint).Coconut milk is a good trick to obtain a nicely moist cake. This loaf, cut into small squares and with
toothpicks planted in them, can be an exotic and fun aperitif. And if you add a home-made Mojito
cocktail, I can guarantee that the person sharing your life will have a
satisfactory smile on his or her face...
Un
reste de poulet rôti ? Pas d’inspiration ? Super Froggy vient à votre
rescousse ! Je vous emmène vers les rives méditerranéennes avec ce risotto ou bien vers
des horizons bien plus lointains avec ce cake au Poulet et lait de coco.
Totale improvisation pour moi : j’ai tout simplement ajouté les
ingrédients qui, pour moi, caractérisent la cuisine Thaï : lait de coco,
citron vert, citronnelle, gingembre et coriandre (j’ai hésité avec la menthe). Le lait de coco apporte une onctuosité très appréciable, car les cakes salés peuvent assez souvent s'avérer trop secs.
Pour un
apéro exotique, coupé en dés, c’est vraiment sympa. Et servi avec un Mojito maison,
alors là, je ne vous dis pas…
« A la Thaï » Chicken loaf
For 6
servings
1 cup roast chicken leftovers, skin
removed, diced
½ cup coconut milk
3 large eggs
1 ½ cup all-purpose flour
1 tablespoon baking powder
2 tbsp olive oil
The juice of one lime
Half a bunch of fresh cilantro,
chopped
1 lemongrass stick, tender part
chopped
1 tbsp freshly grated ginger
1 tbsp sesame seeds
Butter for the mold
Sea salt and freshly ground pepper
Preheat oven 350°F.
Combine flour rand baking powder in
a small mixing bowl.
In another bowl, beat eggs, olive oil, lime juice and coconut
milk.
Sift the flour mixture into the egg
mixture and stir with a wooden spoon.
Fold in chicken, cilantro,
lemongrass and ginger. Taste and season.
Butter a 9 by 5 inch loaf pan. Sprinkle
sesame seeds over the bottom.
Pour the batter into the loaf pan
and smooth the surface.
Bake for 15 minutes over 350°F then
lower temperature to 325°F and continue baking for 35 additional minutes.
Remove from the oven and let cool on
a rack.
Cut the cake in small squares. Plant
a toothpick in the center of each square and serve with a Mojito for the
aperitif.
Cake au Poulet à la Thaï
Pour 6 personnes
150g de
morceaux de poulet rôti, sans la peau et coupés en dés
12cl de lait
de coco
3 gros œufs
200g de farine
1 sachet de
levure chimique
5cl d’huile
d’olive
Le jus d’un
citron vert
½ bouquet de
coriandre fraîche, ciselée
1 bâton de
citronnelle, partie tendre coupée en tronçon
1 CS de
gingembre frais râpé
1 CS de graines de sésame
Beurre pour le
moule
Sel et poivre
du moulin
Préchauffer
le four à 180°C.
Mélanger
la farine et la levure dans un saladier.
Dans
un autre saladier, battre les œufs, l’huile, le jus de citron vert et le lait
de coco.
Ajouter
la farine/levure et bien mélanger à la cuiller en bois.
Ajouter
le poulet, la coriandre, la citronnelle et le gingembre. Mélanger, goûter et
assaisonner.
Beurrer
un moule à cake, verser les graines de sésame et remuer le moule afin de
répartir les graines dans le fond.
Verser
le mélange dans le moule et lisser la surface..
Enfourner
15 minutes à 180°C puis 35 minutes à 150°C.
Sortir
du four et laisser refroidir sur une grille.
Couper
en dés juste avant de servir pour l’apéro, avec des cure-dents.
