Cuisinez écolo...How to be green in the kitchen

Special beginner Cooks : a wow effect without the sweat !

Praliné glacé, Sauce Caramel au Beurre SaléFrozen Praliné Parfait, Salted Butter Caramel Sauce It is quite funny because this recipe has been in my files for many years and I had never dared posting it for I thought it was too simple ! I think I can even say that I had totally erased it from my mind ! And yet, this recipe has gained me the first "wows" from my friends when I was a beginner in the kitchen, how ingrateful I am ! So, why did I change my mind, you may ask ? It all happened when a friend of mine called me... [Lire la suite]

Un basique sans stress...Play it cool in the kitchen...

Sauce Béchamel au micro-ondesMicrowave Bechamel sauce Un-mis-sable ! I have made this recipe on many, many occasions, and each time I am amazed by the way a very liquid milky mixture becomes a creamy and very tasty bechamel ! And in no more than 3 minutes !! Now you have no excuses to skip such delicious recipes that call for béchamel : lasagne, vols-au-vent, savory pies and other au gratin dishes ! And guess who's going to add a recipe to her brand new "useful tips" category ? Yours truly ! In-ra-table ! J'ai... [Lire la suite]

Une nouvelle catégorie : l'astuce du mois/A new category : tip of the month

I am here, but I'm not here...Hehe, this is the magic of Internet : you are reading these lines so you are supposing that I am kindly seated behing my computer. But you are making a big mistake : I am far, very far  from my home country (ahem, actually maybe quite close to you if you leave in Florida), under a hot carribean sun ! Therefore, I have written and saved today's post some days ago, a post that marks the start of a new category : Froggy's tip of the month. While I was rambling through some of my recipes, it occured to... [Lire la suite]

L'inénarrable Gâteau au Yaourt...The ineffable Yogurt Cake...

Gâteau au Yaourt, Mascarpone et Framboises, coulis de FramboisesRaspberry and Mascarpone Yogurt Cake, Raspberry coulis I know no one around me who does not have a sweet memory linked to yogurt cake made with his/her mum or his/her Granny. Baking was not as precise as today, and it was so much fun for us to measure ingredients with the help of the actual yogurt tubs (2 tubs of sugar, 4 tubs of flour,...). And there are so many versions of this cake that you can't really get bored of it : with fruits, marbled, topped with... [Lire la suite]

Trio classique décliné en soupe...A classic"menage à trois" in a soup

Velouté d'Endives, Roquefort et NoixEndive, Blue Cheese and Walnut Soup "Creative"  : the least I can say is that this word is not for me. I have (and I have always had) a total lack of imagination...Why did I make an endive soup ? Because I saw it on a restaurant menu ! And I am not even mentioning the very classic "endive-blue cheese-walnut" "ménage  à trois", lol ! Aaah, how I wish I was as talented as the creative teams I used to work with when I was in the advertising business : I... [Lire la suite]

Financiers d'hiver aux agrumes...Winter financiers with citrus fruits

One of the rare things I like in winter are citrus fruits. Isn't it funny that those round-shape, golden colored fruits looking like...the sun are at their peak in the middle of the freezing cold season ? Moreover, they do bring one very good thing along with their deliciously tart flavor : vitamin C ! Great to improve our general shape, and great for our skin and stomach, too. Aaah, I love them so much that I had the idea to make citrus fruits financiers, with slices of tangerines inside, like a little juicy surprise inside a... [Lire la suite]

Piqûre de rappel : C'est le bon moment pour les crêpes ! Time for a good Crêpe !

Pâte à crêpes inratable au Blender / Unmissable crepes dough, using a blender This recipe has already been posted last year, but as I still have to find a better and easier crepe dough recipe, I have decided to post it again this year !!Many of you might think that we, Parisians, have crepes all year long, and enjoy buying them at the closest crepe street vendor. I am sorry to say that this is a “cliché”.First, We prefer to make our own crepes at home (so easy) rather than buying them from a street vendor : many of them use... [Lire la suite]
