Tarte à la Grenade, aux Pommes et au Pralin/Pomegranate, Apple and Praline powder Tart
From time to time, I enjoy finding myself back into time and leaf through my very first cookbooks, the ones that made me want to cook with all the loving care I could. Among my “cooking bibles”, one of my favourite is “la cuisine de Julie” by Julie Andrieu. I discovered her thanks to her TV show on cable TV, some 10 years ago. So, it was possible to be good-looking and thin and a good cook ? All French women at that time, including me, had the impossible dream of looking like her !! Last week, I stumbled upon her book and more precisely on her “pomegranate” tart recipe. Wow ! I immediately decided to make it and here it is ! A feast for the eyes and for the mouth (but not for the hips, unfortunately…). As for pomegranates -in my opinion one of the most gorgeous fruits ever- they are well worth the effort of peeling and seeding them…

mes tout premiers livres de recettes, ceux qui m’ont donné envie de me lancer
dans la confection de petits plats gourmands. Parmi mes « bibles »
figure le premier livre de recettes de Julie Andrieu « la cuisine de
Julie » ; je peux dire que c’est vraiment grâce à son livre et à ses
premières émissions sur Téva il y a plus de 10 ans, que j’ai commencé à
acquérir une réputation de « bonne cuisinière » (en toute modestie,
hehe !). Je suis récemment retombée sur sa recette de Tarte à la Grenade,
que j’ai immédiatement mise en application ! Je peux vous dire qu’elle est
aussi bonne que belle et surtout super rapide à faire. Elle vaut bien quelques
efforts pour peler et égrener la grenade…
For 1 tart
(about 9 in.) for 6 to 8 servings :
1 already
made puff pastry, refrigerated or frozen then thawed according to instructions
Pomegranate
seeds from 1 pomegranate,
2 golden
apples, medium size, peeled, cored and diced
3.5 oz (1/2
cup) almond powder
1.7 oz (1/4
cup) praline powder
1.7 oz (1/4
cup) unsalted butter
4 oz (9
tablespoons) brown sugar
1 tbsp
vanilla-flavoured sugar
Preheat oven at 400°F.
Melt the butter in a sauce pan over low heat, then add the apple dices, the almond
powder, the praline powder and the 2 sugars (brown and vanilla). Cook over low
heat for 10 to 15 minutes, stirring regularly.
Unroll the puff pastry and arrange on a tart pan. Pierce the pastry with a fork
and bake about 10 minutes in the oven (you can cover it with baking beans).
Remove the pastry from the oven, then cover with the apple mixture and sprinkle
half the pomegranate seeds on top.
Bake for 30 to 40 mintes (until golden brown).
Let cool at room temperature, then sprinkle the
remaining pomegranates on top (the uncooked ones).
Even better when made one day ahead, and served
at room temperature.
1 pâte feuilletée prête à dérouler (230 à 250g)
1 grenade, coupée en 4 puis égrenée
2 pommes golden, pelées et coupées en dés
100g de poudre d’amandes
50g de pralin
50g de beurre
120g de sucre roux
1 sachet de sucre vanillé
Préchauffer le four à 200°C.
Faire fondre le beurre dans une
casserole, puis ajouter les dés de pommes, la poudre d’amandes, le pralin et
les 2 sucres. Faire cuire sur feu doux de 10 à 15 minutes en remuant
régulièrement.
Dérouler la pâte feuilletés dans
un moule à tarte de taille adéquate, piquer avec une fourchette. Faire
pré-cuire à blanc pendant 10 minutes. Retirer la pâte du four, répartir le mélange
aux pommes, puis recouvrir de la moitié des grenades.
Faire cuire de 30 à 40 minutes.
Laisser refroidir, puis répartir
les grenades restantes.
Encore meilleure la veille pour
le lendemain, servie à température ambiante.
